Ingredients
- 100g Speedicook oats
- 350 ml soya milk
- 240 ml water
- 3 Medjoul dates
- 2 tbsp coconut sugar
- 1 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- pinch of ground cardamom
- For the pears:
- 1 pear (Conference work great)
- 1 tbsp coconut sugar
- 1 tsp coconut oil
Method
- Place the oats, water, soya milk, dates, coconut sugar and spices into a small pan.
- Cook on a medium heat, stirring frequently until the porridge thickens.
- While the porridge is cooking slice the pear into thick slices. Heat the coconut oil in a frying pan and sprinkle the pear slices with coconut sugar. Cook the pear on medium high heat until the sugar is caramelised and the edges are turning golden.
- Serve the porridge topped with the pears and maple syrup.
- I also love to add some crunchy nuts and a spoonful of peanut or almond butter.
