Baking with Porridge Oats Recipes

Pear & Raspberry Oaty Crumble

30 minutes + prep time
Makes 6

Ingredients

Crumble Filling:-

4 pears, peeled, cored and sliced

150g raspberries (fresh or frozen)

2 tbsp. stevia based sweetener

Crumble Topping:-

100g oat flour (made from blending White's Jumbo Organic Oats)

75g White's Jumbo Organic Oats

100g stevia based sweetener

1 tbsp. ground cinnamon

90g butter/vegan butter/coconut oil

Method

  1. Preheat the oven to 180 degrees and grease a large oven-proof baking dish.
  2. Peel, de-core and slice pears into quarters and then into half again.
  3. Spread the sliced pears into the dish to cover the base.
  4. Add 150g of fresh or frozen raspberries over the top of the pears.
  5. Sprinkle 2tbsp. sweetener over the fruit to cover. Set to one side.
  6. Blend 100g White’s Organic Jumbo Oats to form oat flour. Pour into a large mixing bowl.
  7. Add an additional 75g whole oats to the oat flour, with 100g sweetener and 1 tbsp. ground cinnamon.
  8. Add butter / vegan butter (chop into cubes) or coconut oil to the mixture and begin to rub into the flour using your fingertips to form a breadcrumb texture.
  9. Sprinkle the mixture evenly over the top of the fruit to completely cover the fruit.
  10. Bake in the centre of the oven for 25-30 minutes at 180 degrees.
  11. Remove from the oven and serve up with warm custard or ice cream.
