Mexican Black Bean Oat Burgers

Makes 4

Ingredients

  • 400g tin black beans, drained and rinsed
  • 100g White's Jumbo Organic Oats
  • 2 spring onions, finely chopped
  • 4 large button mushrooms, finely chopped
  • 1 garlic clove
  • Large handful of fresh coriander
  • 1 red chilli, deseeded and finely chopped
  • Juice of 1/2 lime
  • 1 tsp paprika
  • 1 tsp cumin
  • 2 tbsp. olive oil
  • 1 egg
  • Guacamole
  • 1 avocado
  • Juice of 1/2 lime
  • large handful of fresh coriander, finely chopped
  • Finely diced fresh chilli
  • salt & pepper
  • 8 cherry tomatoes , quartered
  • 1 bun of choice

Method

  1. Add all ingredients to a food processor or blender and roughly blend to allow the mixture to come together.
  2. Using your hands form 4 balls of dough and flatten into patties.
  3. Heat a tablespoon of olive oil in a non-stick pan over a medium heat. When the oil is hot, fry the burgers for 5 minutes each side, until golden and cooked through.
  4. Whilst the burgers are cooking, make the guacamole. In a bowl add avocado and mash using a fork, leaving it fairly chunky. Add lime juice, chopped cherry tomatoes, salt, pepper, a large handful of chopped coriander and chilli. Mix well and leave to one side.
  5. Once the patties are ready, place one onto a bun, add lettuce and a large spoonful of guacamole.
  6. Tuck in and enjoy!
