Add all ingredients to a food processor or blender and roughly blend to allow the mixture to come together.
Using your hands form 4 balls of dough and flatten into patties.
Heat a tablespoon of olive oil in a non-stick pan over a medium heat. When the oil is hot, fry the burgers for 5 minutes each side, until golden and cooked through.
Whilst the burgers are cooking, make the guacamole. In a bowl add avocado and mash using a fork, leaving it fairly chunky. Add lime juice, chopped cherry tomatoes, salt, pepper, a large handful of chopped coriander and chilli. Mix well and leave to one side.
Once the patties are ready, place one onto a bun, add lettuce and a large spoonful of guacamole.
