Ingredients

For the pancake batter

  • 80g White's Jumbo Oats
  • 1 tsp baking powder
  • 240g natural yoghurt
  • 4 large eggs
  • 1 tsp maple syrup

For the cinnamon swirl

  • 55g butter, swirl
  • 50g coconut sugar, brown sugar also works
  • 2 tbsp maple syrup
  • 1 tsp cinnamon

For the cream cheese glaze

  • 50g cream cheese
  • 3 tbsp maple syrup

Method

  1. Place the White’s Oats Organic Oat Flakes in a blender and whizz into a fine powder to make oat flour.
  2. Transfer the oat flour to a bowl and add the remaining ingredients. Stir to combine, then allow to sit for at least 10 minutes.
  3. To make the cinnamon swirl, add the ingredients to a mixing bowl and stir together. If you have a piping bag, fold it over a small cup, that way you can easily pour the cinnamon sugar mixture in. Close the bag and set it aside to cool. If you’re not using a piping bag, simply allow the mixture to cool in the bowl.
  4. To make the cream cheese glaze, add all the ingredients to a bowl and mix to combine. Set aside while you cook the pancakes.
  5. To cook the pancakes, heat a large pan over a medium-low heat and spray with cooking spray. Add 1-2 tablespoons of pancake batter. Swirl with the cinnamon swirl mix – either using a piping bag or a spoon.
  6. Cook until you start to see bubbles appear on the surface, then carefully flip over. Allow to cook for 1-2 minutes on the other side, then transfer to a plate and keep warm. Repeat until all the batter is used.
  7. Add a drizzle of the glaze before serving.

Note: For those who prefer a simpler flavour, feel free to omit the swirl. The pancakes will still turn out delicious and wholesome without it!
